Leaf Agar Agar - versatile, vegan gelling agent in leaf form RUF Leaf Agar Agar is a plant-based alternative to gelatine. Since the gelling power of agar agar is ten times stronger than that of gelatine, just a few leaves are enough to make delicious panna cotta or delicious cream cakes. Dosing is extremely simple, as 2 sheets of agar agar can be used for baking instead of 6 sheets of gelatine.

Preparation:

1. 2 sheets + min. 200 ml liquid + boil for 2 minutes (sheet agar agar must be completely dissolved).
2. Stir in about 300 ml of cold ingredients. When adding whipped cream (e.g. for cake fillings), allow the hot mixture to cool slightly, otherwise the cream will melt.
3. Quickly pour the mixture into the mold. 2 sheets + 500 ml liquid + boil for 2 minutes (sheet agar agar must be completely dissolved).
Depending on the recipe, chill for 1-3 hours.
