What is Pinsa?
For those who are now wondering: What is Pinsa anyway? Pinsa is a traditional Italian flatbread from Rome that has become increasingly popular as a trend product in recent years. In contrast to conventional pizza, Pinsa uses a dough made from a unique combination of three different types of flour (wheat, soy and rice), which is particularly crispy and airy. Pinsa is traditionally topped with high-quality ingredients and baked in a wood-fired oven. With the Pinsa baking mix from RUF, you can now conjure up a delicious Pinsa at home and top it just the way you like.
And it's that easy:

Top and bottom heat: approx. 240 °C
Convection: approx. 220 °C
Baking time pre-baking: approx. 10 minutes
Baking time: approx. 8-10 minutes

300 ml of lukewarm water
1 tablespoon olive oil

Wholemeal flour e.g. spelt (alternatively: rice or rye flour)
preparation
prepare the dough
Mix the base mixture and yeast in a mixing bowl. Add lukewarm water and oil. Using an electric mixer (dough hook), mix briefly at the lowest setting and then knead for 5 minutes on a higher setting to form a dough. Cover and leave the dough to rise in a warm place (e.g. in the oven with the oven light on) for approx. 30 minutes.

After the first resting phase, halve the dough and form two round balls. Cover the balls and let them rest in a warm place for 45 minutes.
Carefully place the first ball of dough onto a work surface generously floured with wholemeal flour and lightly dust the dough with the same flour.
Using your fingertips, shape the dough into an oval shape, starting from the middle, and place it on a baking tray coated with olive oil (you may need to reshape it a little later). Repeat the steps for the other dough ball.
Then place the two pinsen dough pieces in the preheated oven and bake for about 10 minutes.
Top and bake pins
The pre-baked pinsen can be topped as desired. The spice mixture can be used in many different ways (e.g. mixed with strained tomatoes or crème fraiche as a sauce). Inspiration for the topping can be found below under topping ideas.
After topping, use the oven's grill function (or top and bottom heat at 240°C) to finish baking until the desired brownness (approx. 8-10 minutes). The baking time may vary depending on the topping.
Info: Traditionally, the pre-baked pinsen are drizzled with olive oil and sprinkled with coarse sea salt after pre-baking and then baked until they are crispy to the desired degree.
