RUF sponge cake - the quick way to make fluffy cakes The RUF sponge cake base dough offers an uncomplicated way to create delicious and light and airy cakes of all kinds. Its simple preparation and versatility make it the perfect base for both classic strawberry cakes and elaborate wedding cakes. This classic among the base doughs is a valuable ingredient for all those who like to bake, simplifying the baking process and at the same time leading to amazing results.

Preparation temperature

Top and bottom heat: approx. 180 °C
Convection: approx. 160 °C
Baking time: approx. 15-25 minutes

To make dough:
Put the base mixture, eggs and water in a mixing bowl and mix briefly with an electric hand mixer (whisk) on the lowest setting, then mix on the highest setting for at least 3 minutes until creamy. Baking:
Line a springform pan (Ø 26 cm) with baking paper, pour the mixture into it and smooth it out. Bake the base in the preheated oven on the middle rack. Before removing, use a wooden skewer to check whether the sponge cake is baked through. Cool and top:
After baking, let the cake cool in the tin and then use it as desired.

We recommend baking the sponge cake using top/bottom heat.
