Preheat the oven. Top/bottom heat: approx. 170°C Convection oven: approx. 150°C Place the baking mix for the dough, margarine or butter, eggs, and milk in a mixing bowl. Mix everything briefly with a mixer (beaters) on the lowest setting, then on the highest setting for 3 minutes. Smooth the dough in the springform pan. 2 Baking and hollowing out the base Place the pan on the rack in the oven. Shelf position: lower third Baking time: approx. 30 minutes. Meanwhile, drain the peach halves in a sieve, collecting the liquid. Remove the springform pan rim. Remove the cake from the springform pan base, but leave it to cool on a cake rack. Place the base on a cake plate. Hollow out the base to a depth of ½ cm using a tablespoon, leaving a 1 cm wide rim. Crumble the remaining biscuit crumbs coarsely in a bowl. 3 Prepare the topping and decorate the cake Cut the peaches into small pieces. First, whip the cream until stiff. Mix the topping mixture and 100 ml water or peach liquid in a mixing bowl with a whisk for ½ min. until smooth, then immediately fold in the cream in 2 portions. Fold in the peach pieces. Spread the cream in a dome shape to the edge of the hollowed-out base and sprinkle with biscuit crumbs (press down slightly if necessary). Place the cake in the refrigerator for at least 2 hours. Decorate the cake.
