This RUF apple muffin baking mix is ​​perfect for anyone who wants to quickly and easily bake delicious muffins with a fruity apple flavor, with crumbles and a tasty hint of cinnamon. Simply use the baking mix and add your own fresh apples to create a delicious, homemade dessert, coffee or tea biscuit.

Still to add:

  • 2 eggs (size M)
  • 125 ml cooking oil (e.g. sunflower oil)
  • 50 ml water or milk
  • 1-2 medium-sized apples (approx. 160g)

For the crumbles:

  • 50 g soft butter or margarine

preparation

1. Prepare the crumble and apples:

  • Oven on 180°C top/bottom heat or 160°C circulating air preheat.
  • Put the crumble mixture into a bowl together with 50g soft butter or margarine.
  • Knead with a mixer (dough hook) or your hands until crumbles form. Set the crumbles aside.
  • Place the cups on a baking tray or muffin tray.
  • Peel the apples, core them, cut them into small pieces and place them in molds.

2. Prepare the dough:

  • Put the baking mix, eggs, cooking oil and water or milk in a bowl.
  • Mix briefly with a mixer (stirring rods) on the lowest setting.
  • Stir at the highest setting for about 1 minute until creamy.

3. Fill muffin tins:

  • Using 2 tablespoons, pour the batter evenly into the molds containing the apple pieces.
  • Spread the crumbles evenly over the dough.

4. Baking and cooling:

  • Muffins on middle rack for approx. 20-25 minutes bake.
  • Use wooden skewers to check whether the muffins are baked through.
  • Place muffins on a wire rack to cool.
