Cherry cake - fruity, chocolatey delight with a particularly juicy consistency. Loose batter with chocolate flakes and juicy sour cherries make the RUF cherry cake an excellent treat. The sure-fire and quick preparation is also impressive and saves a lot of time. Simply add eggs, butter and sour cherries and the cherry cake is ready to go in the oven. The delicious smell while baking alone will make your mouth water. The cake can then be decorated as desired, e.g. with powdered sugar or a chocolate glaze. Mmm, simply delicious!

Preparation temperature
Convection: approx. 150 °C
Baking time: approx. 60 minutes

150 g soft margarine or butter
3 eggs (size M)
25 ml (approx. 2 tablespoons) milk (1.5% fat)
1 jar of sour cherries (drained weight 350 g)
preparation
Drain the cherries well in a sieve. Put the baking mix, soft margarine or butter, eggs and milk in a mixing bowl and mix briefly with the electric hand mixer (whisk) on the lowest setting, then mix on the highest setting for about 3 minutes until creamy. Add the chocolate flakes and stir briefly. Baking:
Put the dough into a springform pan (Ø 26 cm) lined with baking paper and smooth it out. Distribute the cherries evenly over the dough, leaving a border of approx. 1 cm free. Bake the cake in the preheated oven on the middle shelf. Cool:
After baking, remove the cake from the tin and place on a wire rack to cool. Dust with icing sugar if desired.
