Eggnog cake - a much-loved classic cake with a finely balanced taste. Tastes as if Grandma had baked it herself: The RUF eggnog cake brings back memories of the good old days. Its beautiful appearance makes the cake an eye-catcher in every cake counter and tastes wonderfully fresh when well chilled. A light nut base with chocolate flakes and the fine cream complement each other to create a seductively sweet taste experience. The highlight is the topping, which is prepared with eggnog or without alcohol. A cake treat - which is sure to leave a positive impression!

For the dough:
100 g soft margarine or butter
3 eggs (size M)
For the cream:
600 g cold cream
For decoration:
75 ml egg liqueur
RUF grated dark chocolate as desired
preparation
Put the baking mix, soft margarine or butter and eggs in a mixing bowl and mix briefly with the electric hand mixer (whisk) on the lowest setting, then mix on the highest setting for about 3 minutes until creamy. Put the dough in a springform pan (Ø 26 cm) lined with baking paper and smooth it out. Bake the cake in the preheated oven on the middle shelf. Before removing it, check with a wooden skewer whether the cake is done. After baking, let the cake cool in the pan for about 1 hour. Prepare the base:
Remove the cooled base from the tin, place it on a cake plate and hollow out about 0.5 cm deep with a tablespoon, leaving a 2 cm wide edge. Roughly chop the removed pastry crumbs in a bowl. Place a cake ring or the ring of a springform pan around the base. Prepare the cream and decorate:
Put the cold cream and cream powder in a mixing bowl and mix with a hand mixer (whisk) for 1 minute on the lowest setting, then mix on the highest setting until you have a smooth cream. Pour the cream onto the cake base and smooth it out. Spread the crumbs on the cake so that a 3 cm wide edge is created. Decorate the middle of the cake with egg liqueur and RUF grated chocolate. Place the cake in the fridge for at least 1 hour. Loosen the ring using a damp knife, remove it and smooth the edge.
