Fine marzipan cake - a light and juicy temptation that never fails to delight. Attention marzipan fans: The RUF fine marzipan cake is a heavenly treat at coffee time, as a dessert or as a snack in between meals. Guests young and old alike are immediately fascinated by the juicy consistency and aromatic marzipan notes. All you need to make the cake dough is butter, eggs and milk. The package also contains a marzipan filling and chocolate glaze.

And it’s that easy:

Preparation temperature

Top/bottom heat: approx. 180 °C
Convection: approx. 160 °C
Baking time: approx. 60 minutes


You also need:
For the dough:
150 g soft margarine or butter
3 eggs (size M)
75 ml milk (1.5% fat)

For the shape:
some fat and wheat flour


To make dough:
Put the baking mix, soft margarine or butter, eggs, milk and marzipan filling in a mixing bowl and mix briefly with an electric hand mixer (whisk) on the lowest setting, then mix on the highest setting for about 3 minutes until creamy. Baking:
Grease and flour a loaf pan (approx. 25 cm), put the dough in it and smooth it out. Bake the cake in the preheated oven on the middle shelf. After about 15 minutes of baking, cut the cake lengthwise in the middle about 1 cm deep. Before removing it from the oven, check whether the cake is cooked with a wooden skewer. Cooling and glazing:
After baking, remove the cake from the tin and place it on a wire rack to cool. After an hour, place the icing bag in boiling hot water and leave to soak for 10-15 minutes. Cut open the icing bag and spread the liquid icing onto the cooled cake with a knife.

We recommend baking the baking mix using top/bottom heat.



Baking mix: Wheat flour , sugar, starch, baking powder (acid diphosphates, raising agent sodium carbonates), emulsifiers (E 475, E 471), table salt, flavouring.

Marzipan filling (16.2 %): sugar, 27 % marzipan paste ( almonds , sugar, water, Bitter almonds ), modified starch, thickener pectins.

Cocoa-containing fat glaze (15.2%): sugar, vegetable fats (palm, coconut, shea), low-fat cocoa powder (20%), Lactose , emulsifier lecithin.
