Ostmann Potash Baking Dough 15g bag / 0.52 oz NET. WT.
Ostmann Potash is used as a leavening agent with a characteristic taste, especially for loosening doughs that have a high sugar content and are processed as flat pastries (e.g. honey cake doughs). These types of dough are often left to rest for a few hours or days (cool and covered), as the potash causes the typical loosening of the dough during this time.
Application: As a rule, 10 g (one heaping tablespoon) per 500 g of flour is sufficient. Always dissolve in a little lukewarm water before use.
