The origin of vegetables pickled in vinegar and spices lies in the East Indies. What exactly is contained in the vinegar stock often remains a well-kept secret. All types of vegetables grown in Central Europe can be used as ingredients. Cauliflower, onions, carrots, young corn on the cob or cucumbers are particularly tasty as a side dish. The vegetables, previously blanched and rinsed in ice water, are sealed airtight in the jars with the boiled, aromatic vinegar stock. This preserves the vitamins and nutrients and keeps the vegetables crisp and fresh. Rediscovering preserves Mixed pickles taste great as a side dish with a snack, sophisticated dips or straight from the jar as a snack between meals.
