Stick rock candy, like any other rock candy, is made by slowly crystallizing a sugar solution. However, unlike white rock candy, all brown rock candy, of which stick rock candy is one, is first heated. Heating produces the brown color and the typical caramel-like taste. Only then does the solution crystallize, with the crystals growing slowly. The special feature of stick candy is that large crystals first grow on sticks held in the sugar solution, and it is only at the end of the production process that the product is created in its familiar, coarse form, when the grown crystals are knocked off the sticks. This is where it gets its name from. Used is stick rock candy with its strong caramel flavor gladly for example for soothing home remedies such as herbal teas or hot milk.
