To produce Krümel Kandis, a sugar solution is slowly crystallized, as with any type of rock candy. However, in contrast to the white candy varieties, the sugar solution is first heated in the case of crumb candy, which, in addition to the typical brown coloring, also results in the very special caramel flavor. It is only after this step that the crystals form and the candy grows, as small crystals from the solution combine with others. Similar to the stick rock candy, the crumb rock candy also initially forms larger plates, which are then crushed before the fine pieces known for the crumb rock candy are finally sieved off. This small size of the crystals makes crumb candy a popular ingredient for baking waffles, brown cakes and gingerbread, among other things. But it also enjoys great popularity for traditional coffee and tea specialties, such as Irish coffee or mocha.
