The name of hail sugar is derived from its hailstone-like appearance. However, hailstones are actually a multitude of small sugar crystals adhering to each other, which are obtained by first moistening classic sugar, then pressing it and finally drying it in blocks. These blocks are finally coarsely crushed into the well-known Hagel sugar grains, which are then used to decorate tea and coffee cakes, yeast plaits, breakfast waffles, cakes from the tray and for Christmas baking. Thus, the hail of sugar is literally the sweet grain on top. In waffles and spice cookies, however, hail sugar is also baked along with the baked goods, giving them a crunchy bite.
