The RUF Bourbon Vanilla Cheesecake combines the popular taste of traditional cheesecake with the exotic sweetness of Bourbon vanilla. This harmonious aroma is both inviting and exciting and makes for a delightful surprise. The baking mix in the practical folding box makes preparing this unique cake easy, while portioning remains flexible. Whether as a permanent part of the menu or as a special offer, the RUF Bourbon Vanilla Cheesecake turns every day into an extraordinary taste experience with its characteristic note.

And it’s that easy:


For the dough:
120 g soft butter

For the cream:
500 g low-fat curd cheese
300 g yoghurt (1.5% fat)
3 eggs (size M)
150g butter


Prepare the base

Preheat the oven. Put the baking mix and soft butter in a mixing bowl and knead with an electric hand mixer (dough hook) or your hands until crumbs form. Put the dough in a springform pan (Ø 26 cm) lined with baking paper and press lightly into the base. Pre-bake the base in the preheated oven for approx. 15 minutes.

Prepare the cream

Melt 150g butter. Put the cream powder, low-fat quark, yoghurt and eggs in a bowl and mix with an electric hand mixer (whisk) on a medium setting for about 1 minute until smooth. Add the melted, slightly cooled butter and mix with the electric hand mixer on a medium setting for another minute until smooth. Carefully spread the cream on the pre-baked and still warm base. Bake the cake in the lower third of the oven for about 45-50 minutes.

Cooling and serving

After baking, place the cake on a wire rack to cool and after about 30 minutes carefully loosen the edge of the springform pan using a table knife.

Vegan preparation tip:

For a vegan version, we recommend using 120g soft margarine for the dough. Alternative filling: 400g Skyr Style (e.g. with vanilla flavor), 400g almond yoghurt and 100g liquid margarine. The cake can be prepared and baked as described above.

Preparation temperature

Top and bottom heat: approx. 180 °C

Convection: approx. 160 °C

Wheat flour , sugar, baking powder (acid diphosphates, raising agent sodium carbonates, starch), table salt, natural bourbon vanilla flavor.

Cream powder :

Sugar, starch, Wheat flour , natural bourbon vanilla flavor, bourbon vanilla powder.


    May contain traces of egg, soy, milk, nuts, mustard and lupins.
