Lemon cake - summer cake enjoyment that will delight guests all around. The RUF lemon cake is incredibly quick to prepare and impresses with its seductive, fresh lemon aroma. A popular classic cake for afternoon snacking, as an accompaniment during a coffee break or as an excellent end to a summer meal. The lemon cake forms the perfect base for your own cake creations, for example, which no one can get enough of. The lemon cake can be refined with fruit or chocolate shavings as desired.

For the dough:
150 g soft margarine or butter
3 eggs (size M)
100 ml milk (1.5% fat)
some wheat flour for the mold
For the glaze:
20 ml (approx. 2 tablespoons) lukewarm water
preparation
Put the baking mix, soft margarine or butter, eggs and milk in a mixing bowl and mix briefly with the electric hand mixer (whisk) on the lowest setting, then mix on the highest setting for about 3 minutes until creamy. Baking:
Grease and flour a loaf pan (25 cm), put the dough in it and smooth it out. Bake the cake in the preheated oven on the middle shelf. After about 15 minutes of baking, cut the cake lengthwise in the middle about 1 cm deep. Before removing it from the oven, check whether the cake is cooked with a wooden skewer. Cooling and glazing:
After baking, remove the cake from the tin and place it on a wire rack to cool. Mix the glaze mixture with lukewarm water until smooth and spread it on the cake with a knife.
