Gluten-free lemon cake - brings a feeling of summer to your plate The long search is finally over: RUF Gluten-free lemon cake is a tasty alternative for anyone who cannot tolerate gluten (gluten protein) and loves pastries with a summery, fresh citrus note. Simply prepare the batter with margarine or butter, eggs and water, pour into a loaf pan and bake in the oven for around 60 minutes. Once the cake has cooled, refine it with the lemon glaze and serve! Your guests will definitely ask for another piece!

For the dough:
200 g soft margarine or butter
3 eggs (size M)
25 ml (approx. 2 tablespoons water)

For the form:
some fat and starch

For the glaze:
20 ml (approx. 1-2 tablespoons) lukewarm water

preparation

prepare the dough
Put the baking mix, soft margarine or butter, eggs and water in a mixing bowl and mix briefly with the electric hand mixer (whisk) on the lowest setting, then mix on the highest setting for about 3 minutes until creamy. Bake
Grease a loaf pan (25 cm) and dust with starch, put the dough in and smooth it out. Bake the cake in the preheated oven on the middle shelf. After about 15 minutes of baking, cut the cake lengthwise in the middle about 1 cm deep. Before removing it from the oven, check whether the cake is cooked with a wooden skewer. Allow to cool and glaze
After baking, remove the cake from the tin and place it on a wire rack to cool. Stir the glaze mixture with lukewarm water until smooth and spread it on the cake with a knife.
