Like its bigger brother Kluntje candy, white candy is made by slowly crystallizing a highly concentrated sugar solution. In the process, the small sugar crystals combine to form larger ones; rock candy literally "takes time to grow." The finished white diamond-like sugar crystals of white rock candy are the ideal sugar for fine Darjeeling, Assam or Ceylon teas. But White Candy is also often used to prepare homemade liqueurs or the traditional "Aufgesetzten" with grain and black currants. Finally, white rock candy is sometimes also used in canning as an alternative to coarse-grained preserving sugar - a veritable all-rounder among rock candy varieties, in other words.
