RUF Gingerbread Cupcakes - winter magic with a hint of speculaas The RUF Gingerbread Cupcakes baking mix is ​​the ideal addition to any winter bakery. As part of the winter collection, these cupcakes combine the hearty taste of gingerbread with a creamy frosting note and the characteristic aromas of speculaas. The mix easily makes 12 portions. With the RUF Gingerbread Cupcakes baking mix, you can create an irresistible winter treat that pampers the senses and increases the anticipation of the holidays.

Preparation temperature

Top and bottom heat: approx. 160 °C
Convection: approx. 150 °C
Baking time: approx. 25 min.


For the dough:
1 egg (size M)
100 ml cooking oil
100 ml milk (1.5% fat)

For the cream:
200 g whipped cream
100 ml milk (1.5% fat)


To make dough:
Put the baking mix, egg, cooking oil and milk in a mixing bowl and mix with an electric hand mixer (whisk) first briefly on the lowest setting, then on the highest setting for about 2 minutes until creamy. Baking:
Place the baking cups on a baking tray. Using 2 tablespoons, distribute the dough evenly between the cups. Bake the cakes on the middle rack in the preheated oven. Before removing, check with a wooden skewer whether the cakes are cooked. After baking, place the cakes on a cake rack to cool. Decorate:
Put the cream powder, whipped cream and milk in a tall mixing bowl. Using an electric hand mixer (whisk), beat briefly on the lowest setting, then on the highest setting for about 1-2 minutes until the cream is firm. Then spread the cream evenly over the cakes using a piping bag or a knife.
Tip: As an alternative to a piping bag, you can simply cut off a corner of a conventional freezer bag.
Finally, decorate the cupcakes with gingerbread crumbs.



Baking mix: Wheat flour , sugar, Almond semolina , low-fat cocoa powder, baking powder (raising agent sodium carbonates, acidifier diphosphates, starch), 1.4% spices (cinnamon, cloves, ginger, allspice, nutmeg, coriander, mace, cardamom).

Cream powder: sugar, modified starch, maltodextrin, cinnamon, gelling agent carrageenan.

Brown gingerbread crumbs (2.9%): Wheat flour , glucose-fructose syrup, brown sugar, sugar, gingerbread spices (coriander, cinnamon, cloves, anise), Butter fat , natural cinnamon flavor, raising agents (potassium carbonates, sodium carbonates, ammonium carbonates), table salt, natural flavor, bourbon vanilla bean powder.
