Cherry meringue cake - the heavenly cake temptation with a fine topping Welcome to cake heaven: The RUF cherry meringue cake is a highlight on every cake buffet. A poem about local fruits such as gooseberries, strawberries, blueberries or rhubarb. The meringue cake is easy to prepare, only a few ingredients need to be added. The effort of separating the eggs is completely eliminated thanks to the meringue powder. An aromatic cake favorite with fine almond decoration, of which people always like to take a second piece.

For the dough:
100 g soft margarine or butter
2 eggs (size M)

For covering:
1 jar of sour cherries (drained weight 350 g)
100 ml water

preparation

To make dough:
Drain the cherries well in a sieve. Put the baking mix, soft margarine or butter and eggs in a mixing bowl and mix briefly with the electric hand mixer (whisk) on the lowest setting, then mix on the highest setting for about 3 minutes until creamy. Put the dough in a springform pan (Ø 26 cm) lined with baking paper and smooth it out. Spread the drained cherries on top. Baking:
Put the meringue powder and water in a tall, grease-free mixing bowl. Beat with a hand mixer (make sure to use grease-free beaters) for 3 minutes until stiff. Spread the meringue mixture evenly over the cherries and sprinkle with the decorative almonds. Bake the cake on the middle rack in the preheated oven. Cool:
After baking, remove the cake from the tin and place it on a wire rack to cool.
