For preserving fruit and juicy fruits, compotes and mush, there is preserving sugar. These are coarse, uniformly sized sugar crystals that dissolve particularly slowly. To preserve "sweet" fruits, pour a cooled sugar solution of 200 g to 300 g preserving sugar on 1 liter of water over 1 kg of fruits. For 1 kg of "sour" fruits, the sugar solution should be 400 g to 600 g of preserving sugar to 1 liter of water.
