Brown candy is produced in the same way as white candy, in that a sugar solution slowly crystallizes. So, like Kluntje candy, for example, brown candy also grows over time and the small sugar crystals in the solution combine to form larger and larger crystals. In contrast to the white varieties, however, the sugar solution is heated in advance and then cooled again. The heating process results in the brown color and the typical caramel-like taste. This taste often makes brown rock candy the preferred choice, e.g. for rum stew and brown liqueurs, or for alcoholic hot drinks such as grog, mulled wine and punch.
